Our honey production journey began in 1978, driven by a single question: how to provide consumers with the highest quality natural honey. Along the way, we faced various challenges, underwent certification processes, and conducted extensive product analyses to ensure that today, we can confidently offer the finest honey on the market, meeting the Varzak quality standard.
 
  What Defines the Varzak Quality and Safety Standard?
The Varžak quality standard far exceeds the legal regulations that have been set Codex Alimentarius, European Directive 2001/110/EC on honey and the Honey Regulation of the Ministry of Agriculture, ensure that every jar of honey bearing our name is completely natural, safe for consumption, and of the highest quality.
  Every Jar of Honey has a Verified Origin
The honey we produce has a clearly declared country of origin and can be traced back to its source using the LOT number, allowing us to guarantee its authenticity.

Additionally, the LOT number allows us to verify:

  • Every barrel of honey in the production series, the apiary it comes from, and the supplier who provided it
  • The analysis results for each barrel in production
  • The jar and lid used in production, as they are in direct contact with the honey
  • When the honey was jarred, who jarred it, when it left the warehouse, and who it was sold to.

A verified origin allows us to ensure that our suppliers adhere to the Good Beekeeping Practices (GBP) and Good Hygiene Practices (GHP) standards. Suppliers must implement these standards in their operations to pass our primary selection process and become our partners.

 
 We Do Not Heat Honey to High Temperatures
 
High temperatures can destroy key nutritional components of honey, including enzymes, vitamins, and antioxidants. Through a strictly controlled process, we heat our honey only up to 40°C, ensuring that its composition remains unchanged while allowing for easy pouring into jars.
 No Ultrafiltration for Complete Naturalness
 
The average size of pollen and beneficial components in honey ranges from 10 to 50 microns, and in some cases, up to 200 microns. By filtering honey through a 400-micron sieve, we retain even the largest pollen particles, along with all enzymes, antioxidants, amino acids, and minerals. One of our supplier selection requirements is that honey must not be ultra-filtered. Instead, impurities that appear as foam on the surface of the honey, such as wax residues, propolis, bee fragments, and comb foundations, are carefully removed by skimming..

  We Analyze Every Jar to Ensure the Highest Level of Quality and Safety
Every batch of honey that enters production must undergo the strictest analyses to ensure the highest level of quality. Before production begins, we collect honey samples from our suppliers and send them for analysis to Eurofins Food Integrity Control Services, the most advanced honey testing laboratory in the world, located in Germany, as well as to the "Andrija Štampar" Teaching Institute of Public Health.
 
  • Sensory (Organoleptic) Analysis: The first test evaluates the sensory properties of honey, including color, taste, aroma, and consistency, as these are the most significant indicators of quality.
  • Geographical and Botanical Origin Testing: Conducted to confirm the geographic origin of the honey. Along with the dominant flower pollen, honey also contains pollen from surrounding plants, which helps verify the exact location where the honey was produced.
  • Physicochemical Analysis: We analyze the composition of honey, including enzymes, minerals, antioxidant properties, conductivity, moisture content, and the proportion of glucose, fructose, sucrose, and other natural sugars.
  • Adulteration Testing: Honey that has been adulterated—whether through the addition of sugar or alteration of its chemical composition—fails our authenticity tests. We verify purity using C13 isotopic analysis and HR-IRMS analysis.
  • Microbiological Analysis: This test examines honey for the presence of microorganisms (yeasts and molds) that could negatively affect its quality and safety..
  • Residue Analysis: Heavy metals and pesticide residues can enter honey from the environment, while antibiotic traces may result from beekeeping treatments. Honey collected in highly industrialized areas may exceed allowable levels of these substances. This test ensures that such risks are eliminated.
 
 
  Honey is Stored Under Strictly Controlled Conditions
Honey production is not the final step in our quality and safety management process. Storage is just as important because, under optimal conditions of temperature, humidity, and hygiene, honey retains all its natural benefits and remains unchanged. We also require our suppliers to maintain the same controlled storage conditions, ensuring that the honey entering production is stored with the same level of care and precision.
